So, YES, I know I’ve been MIA with my Menu Plan lately.  I’ll be honest, the summer schedule with the kids had me thrown off schedule from everything for a while!  I’m finally coming up for air and ready to stick to my menu plan this week!

There are a few recipes that are new-to-us this week, so that actually makes me excited to try them!  I’m also going to plan 5 meals for the week.  It seems with our crazy schedule, we are catching other things on the weekend.  Since I’m not shopping as much, I’m spending less all around so it’s within our budget.

  1. Teriyaki Pork Tenderloin, Boxed Potatoes, Veggies
  2. Baked Spaghetti, Garlic Bread (use Homemade Baguette)
  3. Acapulco Delight
  4. Garlic Zucchini Pasta with some chicken thrown in for protein
  5. Poppyseed Chicken, Veggies

First of all, it soothes my soul to know that we aren’t the only ones who eat boxed potatoes ;-).

That garlic-zucchini pasta is now on my menu for the week. My grandparents have zucchini in their garden so that’ll be a nice, cheap and fresh meal. Tasty too! Looks like I’m going to have to start cooking more!

Kristin, I actually love boxed potatoes! We don’t eat potatoes that much so when I do buy a bag, they grow those ears. By the time I go to use them, they are all bad!

I’m interested in trying the recipe for French Baguettes. Do you think I could freeze the uncooked dough? I’m looking for a recipe for small french bread loaves that I could freeze the dough and then only cook one loaf at a time (since inevitably I end up throwing away half a loaf when I buy it at the store).

Julie, you could probably freeze that dough before you let it rise. Then, when you want to make it, thaw it out while it rises (like those fancy Bob Evans rolls) and pop it in the oven. That’s actually a really good idea!
